Apple Coffee Cake
Apple Filling
- 2 apples, peeled and chopped 
- 1/4 cup water 
- 3 Tbs coconut sugar/ or brown sugar 
- 2 tsp cinnamon 
- 1/4 tsp nutmeg 
- 2 tsp tapioca flour/ or (corn starch stirred in a 1/4 cup cold water until dissolved) 
- pinch of salt 
Crumble
- 1/2 cup flour 
- 1/4 cup coconut oil/ or butter 
- 1/3 cup coconut sugar/ or brown sugar 
- 1 tsp cinnamon 
Cake
- 3 eggs 
- 1/4 cup applesauce 
- 1/4 cup coconut oil, melted/ or butter 
- 1 tsp pure vanilla 
- 2/3 cup coconut sugar/ or brown sugar 
- 2 cups flour 
- 1/2 tsp baking soda 
- 1/4 tsp salt 
- 1 tsp apple pie spice 
- 1 tsp cinnamon 
Apple Filling
- Combine water, apples, and a splash of lemon juice in a saucepan 
- Bring to a boil over medium heat and cook until softened, roughly 15 min 
- Mix in dry ingredients until dissolved and the mixture thickens 
- Remove from heat and set aside 
Crumble
- Add all ingredients and mix together with a fork until a crumble forms 
- Set aside 
Cake
- Preheat the oven to 350 degrees 
- Line a bread pan with parchment paper and spray with cooking spray 
- Combine all the dry ingredients in a bowl and mix together: flour, baking soda, salt, and spices-set aside 
- In a separate bowl, beat together the eggs, applesauce, sugar, coconut oil, and vanilla 
- Add the dry ingredients with the wet ingredients and mix until just combined 
- Place the mixture into the prepared bread pan and pour the apple filling into the mixture 
- Using a fork, gently fold in the apple filling 
- Sprinkle the crumble topping over it 
- Bake in the oven for 50 minutes 
- Allow to cool for 20 minutes and enjoy!
