Great Uncle Quiche Lorraine

By Mallory Barendregt

Hi! I’m Mallory Barendregt, I am married to my wonderful Dutch Canadian husband of almost 10 years and we have 4 kids with 1 on the way! We live in Moscow, Idaho and just love it so much. I love to sew little girls clothes and have been known to dabble in other crafts as long as they involve fun fabric. I like to make(and eat!)  yummy baked goods on occasion and here are some of my favorites!

Great Uncle Quiche Lorraine

(No source)

Crust:

1½ C flour

1 tsp salt-

1/ tsp. sugar

½ C oil

2 T milk

Filling:

4 eggs

¾ C whipping cream

¾ C whole milk

¼ C chopped green onions

42 tsp salt

1/8 tsp pepper

Pinch of nutmeg

¾ C bacon (6 pieces-ish)

1½ C shredded Gruyere cheese

1 T flour

Directions:

Whisk flour and salt together in the bottom of the quiche dish.

Add milk to the oil and whisk. Pour directly over the flour mix. Whisk with fork until combined. Press and form crust within the quiche dish.

Meanwhile, in a medium bowl stir together eggs, whipping cream and milk, green onions, salt, pepper, and nutmeg. Stir in bacon. In a small bowl toss together the cheese and flour. Add to egg mixture; mix well.

Line crust with a double thickness of foil.

Bake at 450°for 8 min. Remove foil.

Bake for 4-5 minutes more or until the pastry is set and dry.

Remove from the oven. Reduce temperature to 325°

Pour egg mixture into a hot, baked pastry shell and bake for 40-45 min.

Let stand for 10 min. before serving, or eat immediately while it is boil-off-the-roof-of-your-mouth hot.
